Vanilla Alfajores
Tender, flavorful cookies filled with dulce de leche and coated in shredded coconut. A melt-in-your-mouth Uruguayan classic that will delight your taste buds.

- 3.5 oz softened butter
- 1/2 cup sugar
- 1 whole egg
- 1 egg yolk
- 1 3/4 cups cornstarch
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 10.5 oz dulce de leche
- 1 cup shredded coconut

Cream the softened butter for about 1 minute. Add the sugar and mix for an additional 2 minutes.

Incorporate the whole egg, then the egg yolk.

Add the cornstarch, flour, baking powder, and vanilla extract. Mix well until a homogeneous dough is formed.

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes (or overnight).

Preheat the oven to 356°F and line two baking sheets with parchment paper.

Divide the dough into two parts. Keep one part in the refrigerator. Roll out the other part to a slight thickness on a floured surface.

Cut out cookies using a glass or a round cookie cutter about 2.4 inches in diameter. Repeat with all the dough.

Bake for 12-15 minutes until lightly golden.

Let cool completely, then spread dulce de leche on one cookie, cover with a second, and roll the edges in the shredded coconut.
💡 Chef's Tip
For better stability, refrigerate the dulce de leche slightly before assembling the alfajores. You can also freeze the dough for several days.
