🛒 Ingredients

10 servings

10
  • 500 ml heavy whipping cream, very cold
  • 100 g (¾ cup) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 500 g (about 1 lb) fresh strawberries, hulled and washed
  • 80 g (2 large handfuls) small meringue cookies
  • Fresh mint leaves for garnish

Directions

  1. 1

Chill your mixing bowl and beaters in the freezer for 10 minutes — cold equipment helps the cream whip faster and hold its shape.

  2. 2

Pour the cold heavy cream into the chilled bowl and beat on medium speed, gradually increasing to high. When it starts to thicken, add the powdered sugar and vanilla extract. Continue whipping until stiff peaks form.

  3. 3

Slice half the strawberries; keep the nicest ones whole for the topping.

  4. 4

Build each parfait glass: start with a layer of sliced strawberries, followed by a generous dollop of whipped cream, then crumble a few meringues on top.

  5. 5

Repeat the layers — strawberries, cream, meringues — and finish with a whole strawberry and a mint leaf.

  6. 6

Refrigerate for at least 30 minutes before serving.

💡 Chef's Tip

Use cream with at least 30 % fat for the best, most stable whipped cream. Assemble the glasses close to serving time if you want the meringues to stay crunchy — they soften as they absorb moisture from the cream.
