🛒 Ingredients

8 servings

8
  • 1 kg beef round steak or topside
  • 500 g potatoes
  • 1 onion
  • 1 tomato
  • 2 eggs
  • 100 g grated cheese (gruyère or mozzarella)
  • 100 g sliced ham
  • Fresh parsley, chopped
  • Canned corn and peas
  • 2 tablespoons tomato paste
  • Breadcrumbs
  • Oil for frying
  • Salt, pepper, garlic powder

Directions

  1. 1

Cut the beef into medium escalopes and season with salt, pepper and garlic powder.

  2. 2

Separate the egg whites from the yolks.

  3. 3

Beat the whites until stiff peaks form.

  4. 4

Fold in the egg yolks and mix gently to combine.

  5. 5

Dip each seasoned beef piece into the egg mixture, coating well.

  6. 6

Press firmly into breadcrumbs for an even, crispy crust.

  7. 7

Boil the potatoes in salted water until tender, then mash with butter and warm milk until smooth.

  8. 8

Finely chop the onion, dice the tomato and chop the parsley.

  9. 9

Sauté the onion in a drizzle of oil, add the tomato and simmer for 5 minutes to build a flavorful sauce.

  10. 10

Stir in the tomato paste, corn and peas. Pan-fry the breaded beef until golden, top with the warm sauce, cheese and ham, and serve alongside the mashed potatoes.

💡 Chef's Tip

Double-bread the beef by dipping it twice in the egg and breadcrumbs for an extra thick, crunchy crust. Mozzarella adds an irresistible melty stretch over the finished dish.
