🛒 Ingredients

10 servings

10
  • 500 g (1 lb) lean ground beef
  • 250 g (9 oz) fresh okra
  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tablespoons corn oil
  • 2 teaspoons dried oregano
  • Salt and freshly ground black pepper, to taste

Directions

  1. 1

Wash the okra and pat it completely dry with paper towels — this is the key to preventing a slimy texture. Cut into medium-sized pieces.

  2. 2

Heat the oil in a large skillet over high heat. Add the ground beef and cook, breaking it apart with a spoon, until well browned.

  3. 3

Add the onion and cook for 2 minutes until softened. Stir in the crushed garlic, oregano, salt and pepper.

  4. 4

Add the okra, stir gently to combine, and reduce heat to medium. Cook for 10–15 minutes, stirring occasionally, until the okra is tender.

  5. 5

Taste and adjust seasoning. Serve hot over white rice.

💡 Chef's Tip

Drying the okra thoroughly before cutting is the trick to keeping it slime-free. A squeeze of fresh lemon juice at the end brightens up all the flavors and rounds out the dish beautifully.
