  • 400g of beef (rump or filet), very fresh, high-quality butcher's cut
  • 2 egg yolks fresh (1 per serving)
  • 2 tablespoons of drained capers
  • 1 tablespoon of strong Dijon mustard
  • 2 finely chopped grey shallots
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of Worcestershire sauce
  • A few drops of Tabasco (to taste)
  • 1 teaspoon of fresh lemon juice
  • Fine salt and black pepper from the mill
  • Fresh flat-leaf parsley, chopped (a small bunch)
  • Grilled breadsticks from country bread for serving

    Place the beef in the freezer for 15 minutes to firm it slightly — this facilitates precise chopping.

    Using a large sharp knife, cut the meat into thin slices, then strips, and finally regular small cubes of about 3–4 mm. Never use a food processor: the texture from a knife is the soul of tartare.

    Finely chop the shallots and coarsely chop the capers, leaving them slightly rustic for texture.

    In a cold bowl, gently mix the chopped meat with the shallots, capers, Dijon mustard, olive oil, Worcestershire sauce, lemon juice, and Tabasco. Season with salt and pepper.

    Taste and adjust seasoning: the tartare should be well-seasoned but balanced, with a light acidity and character.

    Using a pastry ring placed on the chilled serving plate, gently press the preparation to form a thick and regular disc. Remove the ring carefully.

    Create a small well in the center of the meat disc and place the raw egg yolk, intact and shiny, delicately.

    Sprinkle with chopped parsley, a turn of black pepper mill, and a light drizzle of olive oil. Serve immediately with grilled breadsticks.

The quality of the beef is non-negotiable: ask your butcher for a piece of first freshness, ideally cut to order on the same day. Keep your bowls, boards, and plates in the refrigerator before assembling — tartare always works at cold temperatures to preserve texture and food safety.
