🛒 Ingredients

1 servings

1
  • 7 oz (200 g) beef steak (sirloin or flank)
  • 2 medium yellow onions
  • 1 beef bouillon cube
  • 3½ fl oz (100 ml) red wine vinegar
  • 2 tablespoons olive oil
  • 1 sprig fresh thyme
  • Salt and freshly ground black pepper

Directions

  1. 1

Slice the onions into thin rings. Place in a bowl with the vinegar, half the crumbled bouillon cube and a pinch of salt. Let marinate for 10 minutes.

  2. 2

Rub the steak with the remaining crumbled bouillon, 1 tablespoon of olive oil, salt and pepper. Rest at room temperature for 5 minutes.

  3. 3

Heat a skillet over high heat with 1 tablespoon of oil. Sear the steak for 1 minute 30 seconds per side for medium-rare, adjusting to your preference.

  4. 4

Set the steak aside, loosely tented with foil. In the same skillet, add the marinated onions with their juices and the thyme sprig.

  5. 5

Cook the onions over medium-high heat for 2 to 3 minutes, scraping up the browned bits from the bottom of the pan.

  6. 6

Slice the steak and top with the softened onions. Serve with steamed potatoes or a crisp green salad.

💡 Chef's Tip

For extra caramelized onions, cook 2 additional minutes until golden. A drizzle of balsamic vinegar at the end adds irresistible depth of flavor.
