🛒 Ingredients

20 servings

20
  • 500 g beef rump steak, cut into cubes
  • 500 g pork loin, cut into cubes
  • 1 kg chicken hearts, cleaned
  • 1 kg chicken breast fillets, cut into cubes
  • 1 smoked sausage (chorizo or kielbasa), thickly sliced
  • 200 g smoked bacon slices
  • 2 medium onions, cut into wedges
  • 1 yellow bell pepper, cut into chunks
  • 3 garlic cloves, minced
  • 2 tbsp dried mixed herbs
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Salt and freshly ground black pepper

Directions

  1. 1

Cut all meats and sausage into even 3 cm cubes. Make the marinade by mixing olive oil, garlic, dried herbs, lemon juice, salt, and pepper.

  2. 2

Divide the meats into separate bowls and coat each with the marinade. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.

  3. 3

Wrap each pork loin cube in a slice of smoked bacon to form compact medallions, securing them firmly on the skewer.

  4. 4

Thread the skewers alternating different meats with onion wedges and yellow bell pepper pieces for color and balance.

  5. 5

Grill over hot coals or on an electric grill for 15–20 minutes, turning regularly until evenly charred and cooked through.

  6. 6

Serve hot with grilled bread, green salad, and your favorite dipping sauce.

💡 Chef's Tip

Soak wooden skewers in water for 30 minutes before use to prevent burning. Chicken hearts are a Brazilian classic — don't skip them if you can find them!
