🛒 Ingredients

5 servings

5
  • 500 g (1.1 lb) bone-in pork rack
  • 2 small onions, sliced into rings
  • 1 large tomato, sliced into rounds
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • 3 medium potatoes, sliced into rounds
  • Salt and freshly ground black pepper, to taste
  • Extra virgin olive oil
  • 1 slice of bacon per rib

Directions

  1. 1

Preheat the oven to 220 °C (425 °F). Season the pork rack with lemon juice, minced garlic, salt, and pepper. Let it marinate for 15 minutes at room temperature.

  2. 2

Drizzle a little olive oil into a roasting dish and spread evenly. Place the pork rack in the center and wrap each rib with a slice of bacon.

  3. 3

Arrange the potato, tomato, and onion rounds around the meat, slightly overlapping. Drizzle everything generously with olive oil.

  4. 4

Roast at 220 °C (425 °F) for 40 minutes until the bacon is crispy and the meat is well browned. Lower the temperature to 160 °C (320 °F) and roast for another 30 minutes until the meat is tender and the vegetables are caramelized.

  5. 5

Rest for 5 minutes before serving. Pairs beautifully with a crisp green salad or rustic bread.

💡 Chef's Tip

For extra-tender meat, marinate the pork rack in the fridge for at least 2 hours or overnight. Add fresh rosemary or thyme sprigs to the dish before roasting for a fragrant herby aroma.
