Cheesy Bacon Roasted Potatoes

- 5 oz smoked bacon, sliced or bacon bits
- 5 oz shredded cheese (Gruyère, Emmental, or mozzarella)
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp fine salt
- 1/2 tsp freshly ground black pepper
- 1 pinch smoked paprika (optional, for extra flavor)

Preheat your oven to 390°F for convection (355°F for a conventional oven). Prepare a large rectangular baking dish.

Peel the potatoes and rinse them thoroughly under cold water. Dry them with paper towels to prevent excess moisture during cooking.

Cut the potatoes into thick slices about 0.4 inches (approx. 1 cm) thick, ensuring even slices for uniform cooking.

Arrange the slices in a single layer in the baking dish. Drizzle generously with olive oil, season with salt, pepper, and the optional smoked paprika. Toss well to coat all slices.

Bake for 30 minutes, gently flipping the slices halfway through (at 15 minutes) so they brown evenly on both sides.

💡 Chef's Tip
For potatoes that are even crispier on the outside and tender on the inside, dry them very well after rinsing and avoid overlapping them in the dish. If you have time, soak them for 15 minutes in cold water to remove excess starch, then dry them thoroughly before seasoning.
