Chickpea, Chorizo, and Spinach Stew

- 4 tbsp extra virgin olive oil
- 1 onion, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 3 sprigs fresh thyme
- 2 bay leaves
- 2 cloves garlic, minced
- 7 oz chorizo, sliced
- 1/4 tsp cinnamon
- 1 tsp paprika
- 28 oz chickpeas (cooked or canned)
- 2 tbsp sherry vinegar
- 14 oz fresh spinach

Heat the olive oil in a large pot. Sauté the chopped onion gently for 3-4 minutes until it begins to soften.

Add the carrot, celery, thyme, and bay leaves. Season with salt and pepper, then cook for 2-3 minutes, stirring occasionally.

Stir in the minced garlic, sliced chorizo, cinnamon, and paprika. Sauté gently until the vegetables soften and the chorizo releases its oils and becomes crispy.

Pour in the chickpeas, sherry vinegar, and 2/3 cup of water. Bring to a simmer for 1-2 minutes to warm the chickpeas through.

Add the fresh spinach and stir until slightly wilted. Remove from heat and adjust seasoning to taste.

💡 Chef's Tip
You can use frozen spinach if you don't have fresh. For a vegetarian version, replace the chorizo with pan-seared button mushrooms. Add broth if the stew is too thick.
