🛒 Ingredients

5 servings

5
  • 6 pork chops
  • 1 lemon, juiced
  • 50 ml white wine vinegar
  • 3 garlic cloves
  • 1 pinch of salt
  • 1 tsp turmeric
  • 1 tsp dried herbs (thyme, rosemary or Italian blend)
  • 1/2 small onion, finely chopped
  • 1 tsp butter
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tomato, diced
  • 100 ml water

Directions

  1. 1

In a bowl, combine 2 crushed garlic cloves, lemon juice, vinegar, turmeric, dried herbs and salt. Add the pork chops, coat well and let marinate for 15 minutes.

  2. 2

In the pressure cooker, heat olive oil and butter over medium heat. Sauté the chopped onion and remaining garlic clove until softened and lightly golden.

  3. 3

Stir in the Dijon mustard and ketchup, then quickly brown the marinated pork chops on both sides.

  4. 4

Pour in the remaining marinade, the diced tomato and water. Seal the pressure cooker lid securely.

  5. 5

Once the valve starts hissing, reduce to low heat and cook for 15 minutes. Turn off the heat and let the steam release naturally — do not force.

  6. 6

Once all steam has escaped, serve immediately or reduce the pan sauce uncovered over low heat to your preferred consistency.

💡 Chef's Tip

For a creamier sauce, stir in a tablespoon of sour cream or crème fraîche after reducing. This dish tastes even better the next day as the flavors deepen overnight.
