🛒 Ingredients

8 servings

8
  • 8 pork chops (shoulder or leg cut)
  • 3 lemons
  • 5 garlic cloves
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt (or to taste)
  • Oil for frying

Directions

  1. 1

Crush the garlic cloves with the salt using a mortar or the flat of a knife until you get a smooth paste.

  2. 2

Squeeze the lemons into a large bowl big enough to hold all the pork chops.

  3. 3

Add the garlic-salt paste and black pepper to the lemon juice and mix until combined.

  4. 4

Submerge the pork chops in the marinade, cover, and refrigerate for 2 to 5 hours.

  5. 5

Heat a drizzle of oil in a large skillet over medium-high heat. Remove the chops from the marinade.

  6. 6

Place the chops in the hot pan and spoon a little marinade over the top — it will first absorb into the meat, then caramelize into a golden crust.

  7. 7

Cook for 4 to 5 minutes per side until deeply golden brown.

  8. 8

Serve hot with steamed rice, roasted vegetables, or a fresh green salad.

💡 Chef's Tip

The longer you marinate (up to 5 hours), the more tender and flavorful the chops will be. Pat them lightly dry before frying if you want an extra crispy crust.
