🛒 Ingredients

3 servings

3
  • 1.2 kg bone-in beef ribs
  • 100g smoked bacon
  • 200g spicy sausage (calabrese type)
  • 3 large onions
  • 5 medium potatoes
  • 5 bay leaves
  • 20g coarse salt (1 level tablespoon)
  • 1 beef broth cube
  • 3 medium carrots (optional)

Directions

  1. 1

Layer thick onion rounds at the bottom of a 4.5L pressure cooker.

  2. 2

Add the first batch of beef ribs (600g) bone-side down, then sprinkle with half the coarse salt.

  3. 3

Cover with the bacon, add the bay leaves, then place the remaining ribs on top.

  4. 4

Sprinkle the rest of the coarse salt and crumble the broth cube over everything.

  5. 5

Add the sausage sliced into thick rounds, then top with potatoes and carrots cut into large chunks.

  6. 6

Seal the pressure cooker — no water or oil needed, the ingredients release their own juices.

  7. 7

Cook on high heat until pressure builds, then reduce to low and cook for 50 minutes.

  8. 8

Turn off the heat and let the sealed cooker rest for 10 minutes — the secret to extra-tender meat.

  9. 9

Carefully open the cooker, transfer to a serving dish and enjoy hot.

💡 Chef's Tip

Don't discard the cooking juices at the bottom — use them to make a rich sauce or a traditional Brazilian farofa (toasted cassava flour) for a perfectly crispy accompaniment.
