No water, no fuss — just incredibly tender beef ribs that practically fall off the bone. The onions and natural meat juices do all the work, creating a rich, deeply flavored broth right inside the pressure cooker. A foolproof weeknight dinner that tastes like it took all day.

🛒 Ingredients

6 servings

6
  • 3.3 lb (1.5 kg) beef short ribs, cut into pieces
  • 3 large yellow onions
  • 6 garlic cloves, crushed
  • 4 beef bouillon cubes
  • 1 fresh red chili pepper, finely chopped
  • Freshly ground black pepper, to taste

Directions

  1. 1

Cut the onions into large wedges and crush the garlic cloves. Finely chop the red chili.

  2. 2

Layer half the onions across the bottom of the pressure cooker to create a protective base.

  3. 3

Add half the beef ribs in a single layer. Scatter 3 crushed garlic cloves, 2 crumbled bouillon cubes, and half the chili over the meat. Season with black pepper.

  4. 4

Repeat the layering: add remaining ribs, then top with the rest of the onions, garlic, bouillon cubes, and chili.

  5. 5

Seal the pressure cooker tightly. Bring to high heat until steam begins to release, then lower to medium heat and cook for 40 minutes.

  6. 6

Turn off the heat and do not open the lid. Allow the pressure to release completely on its own (about 15–20 minutes) before serving.

💡 Chef's Tip

Resist the urge to open the lid early — that residual steam keeps cooking the meat to perfection. The onions will completely dissolve into a natural sauce, so no extra gravy is needed. Pairs beautifully with white rice or crusty bread.
