🛒 Ingredients

4 servings

4
  • 1 kg (2.2 lb) semi-lean pork ribs
  • 1 beef or pork broth cube
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon mixed dried herbs (thyme, rosemary, oregano)
  • Salt and freshly ground black pepper

Directions

  1. 1

Crumble the broth cube and mince the garlic. Rub the pork ribs all over with Dijon mustard, then season with dried herbs, garlic, salt and pepper.

  2. 2

Place the seasoned ribs in the pressure cooker with the crumbled broth cube. Seal the lid and heat over high heat until the cooker reaches full pressure.

  3. 3

Once at pressure, reduce the heat and cook for 10 minutes. Carefully release the pressure, open the lid and stir so the cooking juices coat the meat evenly.

  4. 4

Seal the lid again, bring back to pressure over high heat, then reduce to medium and cook for a further 20 minutes.

  5. 5

Allow the pressure to release naturally before opening. Serve immediately with mashed potatoes, rice or seasonal vegetables.

💡 Chef's Tip

For deeper flavour, marinate the ribs with mustard and herbs in the fridge for up to 1 hour before cooking. The cooking juices make a wonderful natural sauce — stir in a spoonful of crème fraîche and reduce briefly for a richer finish.
