Directions
- 1
Arrange the pork chops in a large dish and drizzle with the juice of all 3 lemons. Let rest for 10 minutes to begin tenderizing the meat.
- 2
In a blender, combine the garlic, 1 roughly chopped onion, crumbled bouillon cubes, ¾ cup water, and salt. Blend until smooth and creamy.
- 3
Coat each pork chop thoroughly with this marinade, covering all surfaces. Sprinkle with oregano and let marinate for 20 minutes at room temperature.
- 4
Slice the remaining 2 onions. Line the bottom of the pressure cooker with half the sliced onions.
- 5
Place the marinated pork chops on top of the onion bed. Close the pressure cooker and heat over high heat.
- 6
At the first whistle, reduce to medium heat and cook for 20 minutes. Release the pressure fully before opening.
- 7
Carefully remove the pork chops and keep warm.
- 8
To the remaining cooking juices, add the tomato paste and remaining 1 cup of water. Stir and simmer for 5 minutes until slightly thickened.
- 9
Spoon the sauce generously over the pork chops and serve immediately with steamed rice or roasted vegetables.
💡 Chef's Tip
For even more tender and flavorful meat, prepare the marinade the night before and let the chops rest overnight in the refrigerator before cooking.
