Delicious chicken with a double-breaded crispy coating. Simple and flavorful, prepare it in a skillet or in the oven according to your preference.

- 4 chicken thighs or drumsticks with skin
- 1 egg
- 4 tbsp milk
- 1 cup flour
- 1 pinch salt
- 1 pinch pepper
- 2 tbsp sweet paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp thyme or herbes de Provence
- 2 cups oil for frying

Season the chicken with salt, pepper, paprika, garlic powder, onion powder, and thyme. Let rest for 10 minutes.

In a bowl, whisk together the egg and milk.

In another bowl, mix the flour, 1 tablespoon of paprika, and a pinch of salt.

Dip each piece of chicken into the egg mixture, then into the flour, then back into the egg, and finally into the flour again for a double-breaded crispy coating.

Skillet method: Heat the oil and cook the chicken over medium heat for 15-20 minutes, turning until golden brown. Oven method: Place on a baking sheet, drizzle with oil, and bake at 392°F for 35-45 minutes.
💡 Chef's Tip
The double-breading (egg-flour-egg-flour) guarantees an extra crispy crust. Optional: add Espelette pepper for extra flavor.
