  • 4 tbsp butter
  • 4 cloves garlic, finely minced
  • 1 cup mixed fresh herbs (thyme, rosemary, parsley)
  • Fine salt and ground black pepper to taste
  • 2 tbsp olive oil

    Clean the baby potatoes and cut the larger ones in half for even cooking. Keep the small ones whole.

    Bring a large pot of salted water to a boil and cook the potatoes for 12-15 minutes until tender at the center.

    Drain the potatoes gently and let them cool for a few minutes.

    Preheat your oven to 390°F. Pour the olive oil into a baking dish.

    Place the cooked potatoes in the dish and smash them lightly with the back of a fork to create irregular surfaces.

    Melt the butter in a small saucepan, add the minced garlic, and cook for 1-2 minutes to infuse the butter.

    Pour the garlic butter over the potatoes, sprinkle with fresh herbs, and season generously with salt and pepper.

💡 Chef's Tip

For an even crispier result, increase the temperature to 430°F for the last 5 minutes. You can also prepare the cooked potatoes in advance and roast them just before serving.
