Directions
- 1
Chop the cassava into chunks and boil in a large pot of salted water until completely tender, about 25–30 minutes. Drain well.
- 2
Mash the hot cassava with a potato ricer or fork until smooth and lump-free. Let it cool slightly.
- 3
Mix in the eggs, parsley, green onion, and salt. Work the dough until it comes together into a soft, pliable mass that holds its shape.
- 4
Lightly flour your hands, take a portion of dough, flatten it in your palm, place a teaspoon of ground meat in the center, and close the dough around it, shaping into a firm oval croquette.
- 5
Roll each croquette in flour until evenly coated, then set aside on a tray.
- 6
Heat oil to 175 °C (350 °F) and fry the croquettes in batches of 4, turning until evenly golden brown on all sides.
- 7
Drain on paper towels and serve immediately while hot and crispy.
💡 Chef's Tip
Make sure the ground meat is cooked until very dry with no excess liquid — this prevents the croquettes from bursting open during frying. Chilling the shaped croquettes for 15 minutes before frying also helps them hold together.
