🛒 Ingredients

6 servings

6
  • 1 kg peeled and cooked cassava (yuca)
  • Butter (to taste)
  • Salt
  • 500 g ground beef
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon tomato paste
  • All-purpose flour for coating
  • Vegetable oil for frying

Directions

  1. 1

Cook the cassava in salted water until very tender. Drain and mash thoroughly until smooth.

  2. 2

Mix in butter gradually until the dough is soft and pliable. Season with salt and let cool slightly.

  3. 3

In a skillet over medium heat, sauté the garlic and onion until soft and translucent.

  4. 4

Add the ground beef and cook, breaking it up with a spoon. Stir in the tomato paste and cook until the filling is dry and well-seasoned.

  5. 5

Take a portion of cassava dough in your palm, flatten it, place a spoonful of filling in the center, and shape into an oval croquette.

  6. 6

Roll each croquette in flour until evenly coated.

  7. 7

Heat oil to 175 °C (350 °F) and fry the croquettes in batches until golden brown. Drain on paper towels and serve hot.

💡 Chef's Tip

Make sure the beef filling is very dry before stuffing — excess moisture will cause the croquettes to burst during frying. For extra crunch, double-coat in flour.
