🛒 Ingredients

8 servings

8
  • 4 large potatoes
  • 1 chicken bouillon cube
  • 2 to 3 cups all-purpose flour
  • 1 kg (2.2 lb) ground beef
  • 1/2 bunch fresh cilantro or parsley
  • 1/2 onion, chopped
  • Salt to taste
  • 1 tomato, finely diced
  • 1/2 bell pepper, diced
  • 2 tablespoons tomato paste
  • 3 garlic cloves, minced
  • Oil for frying

Directions

  1. 1

Boil the potatoes in salted water with the chicken bouillon cube until completely tender.

  2. 2

Drain and let cool slightly, then mash into a smooth, lump-free purée.

  3. 3

Heat a drizzle of oil in a skillet and sauté the ground beef with minced garlic and salt until browned.

  4. 4

Stir in the tomato paste, bell pepper, onion, diced tomato, and chopped cilantro. Mix well.

  5. 5

Cover and cook over medium-low heat for 8–10 minutes until the filling is dry and fragrant.

  6. 6

Gradually work the flour into the mashed potatoes, kneading until you get a smooth, pliable dough that doesn't stick to your hands.

  7. 7

Lightly oil your hands, take a portion of dough, flatten it in your palm, and place a spoonful of filling in the center.

  8. 8

Fold the dough around the filling and roll into a smooth ball. Repeat with the remaining dough and filling.

  9. 9

Heat oil to 170 °C (340 °F) in a deep pan. Fry croquettes in batches for 4–5 minutes until deeply golden.

  10. 10

Drain on paper towels and serve immediately with hot sauce or a fresh salad.

💡 Chef's Tip

Add a pinch of cumin and smoked paprika to the filling for extra depth of flavor. If the dough feels too soft, add more flour a little at a time. Uncooked croquettes freeze well and can be fried straight from frozen.
