🛒 Ingredients

4 servings

4
  • 500 g (1 lb) beef sirloin steaks
  • 1 tablespoon Dijon mustard
  • 2 tablespoons unsalted butter
  • 2 onions, sliced into rings
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper
  • 1 sprig fresh thyme

Directions

  1. 1

Season the steaks generously with salt and pepper, then brush with a thin layer of Dijon mustard. Let rest 5 minutes at room temperature.

  2. 2

Melt the butter in a large skillet over high heat until it begins to foam.

  3. 3

Place the steaks side by side and sear for 2–3 minutes on each side until a golden-brown crust forms.

  4. 4

Cook to your preferred doneness — rare, medium, or well done. Set aside loosely tented with foil to keep warm.

  5. 5

In the same pan, add the sliced onions and thyme. Sauté over medium heat, stirring occasionally, until soft and translucent.

  6. 6

Deglaze with the balsamic vinegar and cook 2 more minutes until the onions are lightly caramelized.

  7. 7

Spoon the caramelized onions generously over the steaks and serve immediately.

💡 Chef's Tip

For extra richness, finish with a small knob of cold butter stirred into the onion pan sauce just before serving.
