🛒 Ingredients

8 servings

8
  • 1 piece of sirloin strip, about 1.5 kg (3.3 lbs)
  • 3 medium onions, sliced into thick rounds
  • 2 beef bouillon cubes
  • 3 garlic cloves, minced
  • 200 ml cold water
  • Salt and freshly ground black pepper
  • Fresh flat-leaf parsley, chopped
  • 1 sprig fresh thyme

Directions

  1. 1

Using a sharp knife, pierce the sirloin all over to help the seasonings penetrate deeply into the meat.

  2. 2

Combine minced garlic, salt, pepper and chopped parsley into a paste. Rub it thoroughly over the entire surface of the meat and let it rest for 10 minutes.

  3. 3

Place half the onion rounds in an even layer on the bottom of the pressure cooker. Crumble 1 bouillon cube over them.

  4. 4

Set the sirloin on top of the onion bed, cover with the remaining onions, crumble the second bouillon cube and lay the thyme sprig on top.

  5. 5

Pour in the cold water, seal the pressure cooker lid and bring to full pressure over medium-high heat.

  6. 6

Once the valve starts releasing steam, reduce to medium heat and cook for 30 minutes. Release pressure naturally before opening.

  7. 7

Remove the sirloin and slice it into thick cuts. Return the pot to high heat without the lid and reduce the cooking juices for 5 minutes into a glossy sauce.

  8. 8

Season with additional salt and pepper if needed, then spoon the onion sauce generously over the sliced beef.

  9. 9

Serve immediately with steamed white rice or mashed potatoes.

💡 Chef's Tip

For deeper flavor, marinate the meat overnight with the garlic-herb rub. A splash of dry red wine added before sealing the cooker adds a wonderful richness to the sauce.
