  • 9 oz cherry tomatoes
  • 1 medium fresh cucumber
  • 2 ripe avocados
  • 5 oz fresh or canned corn kernels
  • 1 red onion
  • 2.5 tbsp fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • Fine salt and ground black pepper
  • 1 oz fresh herbs (parsley, chives, or basil)
  • Ice cubes for serving

    Wash the lettuce and spin dry gently. Tear the leaves and place them in a large salad bowl.

    Cut the cherry tomatoes in half and add to the lettuce.

    Slice the red onion into thin rings. Soak in cold water for 5 minutes to reduce the sharpness, then drain.
