- 4 medium tomatoes (approx. 21 oz), quartered or diced
- 1 medium red onion, thinly sliced
- 5.3 oz pitted black olives
- 7 oz fresh feta cheese, cubed
- 1/4 cup extra virgin olive oil
- Fresh juice of 1.5 lemons (approx. 3 tbsp)
- 1 tsp dried oregano
- Salt and ground black pepper, to taste
- 1 garlic clove, crushed (optional)
- Fresh chopped parsley (optional)

Prepare the vegetables: cut the cucumbers into uniform cubes, divide the tomatoes into quarters or similarly sized pieces, and thinly slice the red onion.

Place all the vegetables in a large salad bowl: cucumber, tomatoes, red onion, and olives.
