  • Fresh juice of 1.5 lemons (approx. 3 tbsp)
  • 1 tsp dried oregano
  • Salt and ground black pepper, to taste
  • 1 garlic clove, crushed (optional)
  • Fresh chopped parsley (optional)

    Prepare the vegetables: cut the cucumbers into uniform cubes, divide the tomatoes into quarters or similarly sized pieces, and thinly slice the red onion.

    Place all the vegetables in a large salad bowl: cucumber, tomatoes, red onion, and olives.

    Prepare the vinaigrette: in a small bowl, whisk together the olive oil, fresh lemon juice, oregano, crushed garlic, salt, and pepper.
