🛒 Ingredients

4 servings

4
  • 250 g (9 oz) firm potatoes
  • Butter for greasing the pan
  • A bowl of salted water (for moistening hands)
  • Cream cheese
  • Shredded mozzarella
  • Filling option 1: thinly sliced raw zucchini
  • Filling option 2: shredded dried beef
  • Filling option 3: shredded chicken with corn, or with sun-dried tomatoes and mushrooms
  • Filling option 4: thick beef stroganoff
  • Filling option 5: garlic-sautéed shrimp

Directions

  1. 1

Place whole, unpeeled potatoes in a pot of cold water. Bring to a boil, then cook for exactly 7 minutes — they must stay firm.

  2. 2

Drain and refrigerate overnight. This rest period is the key to a rösti that holds its shape perfectly.

  3. 3

The next day, grate the cold potatoes using the coarse side of a box grater.

  4. 4

    Butter a 16 cm (6-inch) skillet generously.

  5. 5

Press a layer of grated potato onto the bottom of the pan, regularly wetting your hands in the salted water — it makes shaping easier and seasons the potato at the same time.

  6. 6

Spread your chosen filling evenly over the potato layer, keeping a 1 cm border all around.

  7. 7

Cover with a second layer of grated potato, pressing gently to seal.

  8. 8

Cook over medium heat for about 3 minutes until the bottom is deep golden brown.

  9. 9

Place a second buttered skillet on top, flip the rösti over with a confident motion, and cook for another 3 minutes.

  10. 10

Repeat the flip one or two more times until both sides are beautifully crisp and golden. Serve immediately.

💡 Chef's Tip

The overnight chill is non-negotiable: cold pre-cooked potatoes grate cleanly and bond together perfectly during cooking. For a lighter version, use olive oil instead of butter. The rösti loses its crunch as it cools, so serve it straight from the pan.
