🛒 Ingredients

8 servings

8
  • 500 g potatoes
  • 500 g ground beef
  • 2 ripe tomatoes, seeded
  • 1 bell pepper
  • 2 tbsp tomato paste
  • 3 garlic cloves, minced
  • 300 g all-purpose flour (about 3 cups)
  • 3 tbsp vegetable oil
  • Salt and black pepper, to taste

Directions

  1. 1

Boil the potatoes until completely tender. Drain and mash them thoroughly into a smooth, lump-free purée.

  2. 2

Add the flour gradually, kneading by hand until the dough is soft, smooth, and can be rolled into logs without sticking.

  3. 3

Roll the dough into long ropes and cut into small pieces about 2 cm each.

  4. 4

Drop the gnocchi into a large pot of salted boiling water. Scoop them out as soon as they float to the surface and set aside.

  5. 5

Heat the oil in a pan over medium heat. Sauté the minced garlic and finely diced bell pepper until softened.

  6. 6

Add the seeded tomatoes and ground beef. Cook until browned, then stir in the tomato paste. Season with salt and black pepper.

  7. 7

Arrange the gnocchi on a serving dish and spoon the hot ragu generously over the top. Serve right away.

💡 Chef's Tip

Use starchy potatoes like Russet or Yukon Gold for the fluffiest gnocchi. Work the dough while the potatoes are still warm for the smoothest texture.
