- 1
Cut the chicken breast into 1.2 to 1.5-inch pieces. Season generously with salt and pepper.
- 2
Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 2-3 minutes until translucent and fragrant.
- 3
Increase the heat and add the chicken pieces. Brown them for 4-5 minutes on each side to develop a golden crust.
- 4
Reduce to medium heat. Add the minced garlic, tomato paste, and Dijon mustard. Stir well for 1 minute.
- 5
Sprinkle with sweet paprika and fresh pepper. Pour in the sour cream slowly while stirring.
- 6
Incorporate the drained corn and pre-steamed broccoli. If the sauce seems too thick, pour in a little chicken broth.
- 7
Simmer over low heat for 5-7 minutes, allowing the sauce to thicken slightly and the flavors to meld.
- 8
Taste and adjust seasoning with salt and pepper. Sprinkle with fresh parsley or chives just before serving.
💡 Chef's Tip
For an even creamier sauce, whisk 1 teaspoon of flour into a little cold milk before adding it to the cream. Ensure the chicken does not cook too long after adding the cream so it remains tender. You can prepare the vegetables in advance and reheat them by adding them at the end.
