🛒 Ingredients

15 servings

15
  • 1 kg beef tripe, cut into cubes
  • 4 large garlic cloves, crushed
  • 1 large onion, sliced
  • 2 mild chili peppers or sweet peppers
  • Salt and black pepper to taste
  • Fresh parsley, chopped, to taste
  • 1 tablespoon all-purpose flour
  • White vinegar or lemon juice for cleaning

Directions

  1. 1

Thoroughly clean the tripe by rubbing it with white vinegar or lemon juice, then rinse well under cold running water.

  2. 2

Place the tripe in a pressure cooker with the garlic, onion, peppers, salt, and black pepper. Cover completely with cold water.

  3. 3

Cook under pressure for about 40 minutes until the tripe is very tender and soft throughout.

  4. 4

Open the pressure cooker and let it simmer uncovered for an additional 15 minutes to reduce and concentrate the broth.

  5. 5

Dissolve the flour in half a glass of cold water, then stir it slowly into the pot, mixing constantly to avoid lumps.

  6. 6

Add the chopped fresh parsley, adjust seasoning to taste, and serve hot with crusty bread or boiled potatoes.

💡 Chef's Tip

Soaking the tripe in vinegar water for 30 minutes before cooking helps eliminate any strong odor. Adding a bay leaf and a sprig of thyme during cooking adds extra depth of flavor to the broth.
