- 6 very thin slices of ham (Prosciutto or cooked ham)
- 1 ripe but firm mango, julienned
- 1 cucumber, seeded and julienned
- 1.75 oz grated cheese (Parmesan or Grana Padano, about 1/2 cup)
- Fresh mint leaves
- 1 handful of toasted sunflower seeds
- Arugula or mixed baby greens
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- 1 tsp honey
- Salt and black pepper to taste

Wash the greens, cucumber, and mango

Cut the mango and cucumber into thin strips
