  • 1 ripe but firm mango, julienned
  • 1 cucumber, seeded and julienned
  • 1.75 oz grated cheese (Parmesan or Grana Padano, about 1/2 cup)
  • Fresh mint leaves
  • 1 handful of toasted sunflower seeds
  • Arugula or mixed baby greens
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • Salt and black pepper to taste

    Wash the greens, cucumber, and mango
