  • 4 bone-in, skin-on chicken thighs (about 2.6 lbs)
  • 3.5 oz unsalted butter, softened
  • 4 cloves garlic, finely minced
  • 2 tbsp fresh flat-leaf parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp sweet paprika
  • Zest of half a lemon
  • 1 tbsp lemon juice
  • 1 tsp fine salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp olive oil
  • ¾ cup chicken broth
  • 1 yellow onion, cut into wedges

Directions

    Take the butter out of the refrigerator 30 minutes in advance so it is well softened. Preheat the oven to 400°F (convection setting).

    Prepare the herb butter: in a bowl, mix the softened butter with the minced garlic, parsley, thyme, rosemary, paprika, lemon zest, lemon juice, salt, and pepper. Mix well until you have a smooth paste.

    Pat the chicken thighs dry with paper towels. With your fingers, gently loosen the skin without detaching it completely to create a pocket.

    Generously slide the herb butter under the skin of each thigh, massaging to distribute it evenly. Coat the outside of the skin with the remaining butter.

    In a baking dish, place the onion wedges. Arrange the chicken thighs on top, skin-side up. Drizzle with olive oil.

    Pour the chicken broth into the bottom of the dish. Bake at 400°F for 20 minutes to brown the skin.

    Lower the temperature to 350°F and continue cooking for an additional 25 to 30 minutes, basting the chicken with the pan juices every 10 minutes.

    Check for doneness by piercing the thickest part: the juices should run clear. The internal temperature should reach 165°F. Let rest for 5 minutes before serving.
