  • 26.5 oz lamb, cut into pieces
  • 1.5 tsp saffron
  • 1 large onion, chopped
  • 1.7 tbsp water
  • 1 oz fresh parsley
  • 1 tbsp butter
  • 1 lemon
  • Salt and pepper to taste

    Heat the olive oil in a large skillet over medium-high heat. Add the lamb and cook until browned on all sides, about 5 minutes.

    Season with saffron, salt, and pepper. Stir in the majority of the chopped onions and pour in the water. Bring to a boil.

    Cover the skillet, reduce the heat to medium-low, and let simmer until the lamb is very tender, about 15 minutes.

    Uncover the skillet, stir in the butter, and let the sauce reduce for 5 to 10 minutes until the desired consistency is reached. Adjust seasoning to taste.
