- 4 farm-fresh eggs
- 5 oz quality bacon
- 3.5 oz grated Comté cheese (or Gruyère)
- 1 medium red onion
- 2 tbsp extra-virgin olive oil
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- Salt and freshly ground pepper

Cook the eggs in boiling salted water for 6 to 7 minutes to get runny yolks. Refresh in cold water and peel delicately.

Cut the bacon into small strips (lardons) and sauté in a pan over medium-high heat until crispy. Drain on paper towels.

Wash and dry the lettuce. Tear it into generous bite-sized pieces in a large salad bowl.
