🛒 Ingredients

6 servings

6
  • 1 kg (2.2 lb) ground beef
  • 500 g (17.6 oz) fine bulgur wheat
  • 2 onions, finely chopped
  • 1 tomato, seeded and diced
  • fresh mint, chopped, to taste
  • salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons extra virgin olive oil

Directions

  1. 1

Soak the bulgur wheat in cold water for 3 hours. Drain thoroughly, then squeeze out as much water as possible using your hands or a clean kitchen towel.

  2. 2

In a large bowl, combine the bulgur, ground beef, onions, tomato, and mint. Season with salt and pepper. For a smoother texture, pulse the mixture in a food processor.

  3. 3

Preheat the oven to 200 °C (390 °F). Press the mixture evenly into a greased baking dish, score the surface in a diamond pattern, and drizzle generously with olive oil.

  4. 4

Bake for 30–35 minutes until the top is deeply golden. Serve hot alongside a green salad, yogurt dip, or warm flatbread.

💡 Chef's Tip

A pinch of cinnamon and ground cumin adds wonderful depth to the mixture. Leftovers keep well in the fridge and reheat beautifully in the oven at 180 °C.
