Lemon Lamb Souvlaki
Tender and juicy lamb skewers marinated in fresh lemon and dill. A fragrant Greek classic, easy to prepare and spectacular to serve. Ideal for a meal with family or friends.

- 2 cloves Garlic
- 2 tsp Sea salt
- 4 tbsp Olive oil
- Zest and juice of 1 Lemon
- 1 tbsp Fresh dill
- 26.5 oz Lamb leg
- Pita bread for serving

Pound the garlic with the sea salt in a mortar or blend until a smooth paste is obtained.

Mix the olive oil, lemon juice and zest, dill, and garlic paste.

Cut the lamb into cubes. Add to the marinade and mix well.

Cover and marinate in the refrigerator for at least 2 hours, ideally overnight.

Soak bamboo skewers in cold water for 30 minutes if using.

Remove the marinade from the fridge 30 minutes before cooking.

Thread the lamb pieces onto the skewers.

Preheat the broiler, griddle, or grill to high heat.

Cook the skewers for 2-3 minutes per side, basting with the remaining marinade.

Lightly warm the pita bread and fill with the souvlaki. Serve with Greek salad and tzatziki.

Prefer metal skewers to avoid soaking. Cut lamb pieces to a regular size for even cooking. Serve with a fresh Greek salad and tzatziki for a complete authentic meal.
