  • 1.1 lbs ripe tomatoes
  • 1 fresh cucumber
  • 1 red bell pepper
  • 2 garlic cloves
  • 3.5 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste
  • 2 cups water or vegetable broth
  • Ice cubes

    Wash and cut the tomatoes, cucumber, and bell pepper into pieces

    Place all the vegetables and garlic in a blender

    Blend until smooth

    Pour into a bowl and add the olive oil and vinegar

    Season with salt and pepper

    Add the water or broth to reach the desired consistency

    Chill in the refrigerator for at least 30 minutes
