Directions
- 1
In a bowl, whisk the egg with a fork, then add the milk, oil, self-raising flour, parmesan and salt. Mix until the batter is smooth and lump-free.
- 2
Prepare the filling: mash the drained sardines with a fork and combine with the diced mozzarella, corn, peas and dried oregano.
- 3
Grease and lightly flour a large mug (at least 350 ml capacity) if you plan to unmould the cake.
- 4
Pour half the batter into the mug, spoon the filling into the centre — don't go past the halfway mark — then top with the remaining batter. The total should not exceed ¾ of the mug.
- 5
Microwave on full power for 3 to 4 minutes until the top feels firm to the touch. Rest for 1 minute before eating.
💡 Chef's Tip
No self-raising flour? Use plain flour plus ½ teaspoon baking powder. Switch the filling for whatever you have on hand — ham, roasted peppers, sautéed mushrooms, or leftover vegetables all work brilliantly.
