🛒 Ingredients

6 servings

6
  • 12 thin-cut bacon slices
  • 6 large eggs
  • salt and freshly ground black pepper to taste
  • 3 oz (80 g) cheddar cheese, cut into small cubes
  • 2 tablespoons fresh chives or parsley, chopped
  • butter or cooking spray for greasing (optional)

Directions

  1. 1

Preheat your oven to 410°F (210°C). Lightly grease a 6-cup muffin tin if needed.

  2. 2

Line each muffin cup with 1–2 strips of thin bacon, pressing them firmly against the bottom and sides to form a cup shape.

  3. 3

Bake for 10 minutes until the bacon is lightly golden and holds its shape.

  4. 4

Remove from the oven and carefully crack one egg into each bacon cup.

  5. 5

Season each egg with a pinch of salt and black pepper.

  6. 6

Scatter cheddar cubes evenly over each egg.

  7. 7

Return to the oven at 450°F (230°C) and bake for 15–20 minutes depending on your preferred egg doneness.

  8. 8

Remove from the oven, sprinkle with chopped herbs, and serve immediately.

💡 Chef's Tip

For runny yolks, start checking at the 14-minute mark. Run a thin knife around the edges to release the bacon cups cleanly from the tin.
