  • 2 lbs stewing beef
  • 1 medium onion
  • 3 cups beef broth
  • 1 small turnip
  • 1 stalk celery
  • 4 medium carrots
  • 4 sprigs fresh parsley
  • 2 cups potatoes
  • 1/2 leek
  • Fresh chopped parsley for garnish

Directions

    Heat the olive oil in a large Dutch oven. Cut the beef into 1-inch cubes and brown them in the oil until colored.

    Thinly slice the onion and add it to the beef. Pour in the broth and bring to a boil.

    Reduce the heat, cover, and simmer for 30 minutes.

    Add the vegetables cut into pieces (turnip, leek, carrots, potatoes, and celery).

    Continue cooking for 20-25 minutes until all vegetables and meat are tender.
