🛒 Ingredients

5 servings

5
  • 2 tbsp extra virgin olive oil
  • 2 kg (4.4 lb) fresh veal shanks (do not use frozen meat)
  • 2 medium onions, sliced into rings
  • 1 green or red bell pepper, sliced
  • 1 tbsp minced or crushed garlic
  • 4 fresh tomatoes, diced and seeded
  • 1 can (340 g / 12 oz) ready-made tomato sauce (not tomato paste)
  • 1½ tsp dried sage (or bay leaves)
  • White pepper to taste
  • Salt to taste

Directions

  1. 1

Pour the olive oil into the base of a cold pressure cooker.

  2. 2

Divide all ingredients into two equal portions. Layer the first portion in this order: veal shanks, onion, garlic, fresh tomatoes, bell pepper, tomato sauce, then the seasonings (sage, white pepper, salt). Repeat with the second portion.

  3. 3

Seal the pressure cooker and bring to high heat until it reaches full pressure (valve starts hissing).

  4. 4

Reduce heat to low and cook for 50 to 60 minutes. Do not significantly exceed this cooking time.

  5. 5

Turn off the heat and allow the pressure to release naturally before opening — approximately 15 minutes.

  6. 6

Serve the shanks covered in their sauce alongside white rice and creamy polenta or mashed potatoes.

💡 Chef's Tip

For a richer, silkier sauce, remove the shanks after cooking and simmer the braising liquid uncovered for 5 minutes to reduce. Swap sage for thyme or rosemary if you prefer.
