🛒 Ingredients

30 servings

30
  • 1 heaped tablespoon instant dry yeast
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 100 ml warm milk
  • 200 ml warm water
  • 1 egg
  • 650 to 700 g all-purpose flour
  • 100 ml neutral oil
  • 500 g lean ground beef
  • 3 ripe tomatoes, finely diced
  • 1 onion, finely chopped
  • 1 garlic clove (optional)
  • 80 g pitted olives, chopped
  • 1/2 teaspoon ground nutmeg (optional)
  • Fresh parsley and chives, to taste

Directions

  1. 1

In a large bowl, combine the yeast, sugar, warm water, warm milk, salt, and oil. Stir until fully dissolved.

  2. 2

Gradually mix in half the flour using a wooden spoon.

  3. 3

Add the egg, then continue adding the remaining flour little by little.

  4. 4

Before using all the flour, work the dough by hand to check the texture — it should be soft and non-sticky. Adjust the amount based on egg size.

  5. 5

Knead the dough in the bowl for 5 minutes with a back-and-forth motion until smooth and elastic.

  6. 6

Cover the bowl with plastic wrap and let the dough rest for 20 minutes in a warm spot.

  7. 7

Meanwhile, sauté the onion and garlic in a drizzle of oil. Add the ground beef and cook until browned.

  8. 8

Stir in the tomatoes, olives, nutmeg, parsley, and chives. Season, cook for 5 more minutes, then let cool.

  9. 9

Preheat the oven to 200 °C (400 °F). Divide the dough into 30 equal balls and flatten each into a disc about 10 cm wide.

  10. 10

Place a spoonful of filling in the center of each disc and pinch the edges to seal into a triangle or half-moon shape.

  11. 11

Place on a parchment-lined baking sheet, brush with a little oil, and bake for 15–20 minutes until golden.

💡 Chef's Tip

For extra-soft rolls, replace half the water with warm whole milk. Unbaked stuffed rolls freeze beautifully — bake them straight from frozen, adding 5 minutes to the baking time.
