  • 1 tbsp butter
  • 2 pork chops
  • 4 slices bacon, chopped
  • 2 medium potatoes, peeled and cut into chunks
  • 1 large carrot, peeled and sliced
  • 1/2 medium rutabaga, peeled and cut into chunks
  • 1/2 head cabbage, cut into wedges
  • 1 bay leaf
  • 4 fl oz hard cider
  • 4 fl oz chicken broth

    Heat the butter in an oven-safe dish until shimmering. Sear the pork chops for 2-3 minutes per side until golden brown. Remove from the dish.

    Add the chopped bacon, carrot, potatoes, and rutabaga to the dish. Sauté lightly until they begin to brown. Stir in the cabbage and place the pork chops back on top. Add the bay leaf. Pour in the cider and broth. Cover the dish.

    Simmer gently for 20 minutes, or until the pork is cooked through and the vegetables are tender. Serve directly at the table in the cooking dish.
