  • 1 red bell pepper
  • 1 orange bell pepper
  • 7 oz cherry tomatoes
  • 1 cooked beet
  • 3.5 oz roasted squash
  • 2 kiwis
  • 1 orange
  • 1.75 oz pumpkin seeds
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • Salt and pepper

Directions

    Wash and prepare the spinach in a large bowl.

    Grate the carrots and cut the bell peppers into thin strips.

    Cut the cherry tomatoes in half and the beet into small cubes.

    Cut the orange and kiwis into segments.

    Assemble all the vegetables and fruits on top of the spinach.

    Add the roasted pumpkin seeds.

    Prepare the vinaigrette by mixing the olive oil and vinegar.
