- 1 orange bell pepper
- 7 oz cherry tomatoes
- 1 cooked beet
- 3.5 oz roasted squash
- 2 kiwis
- 1 orange
- 1.75 oz pumpkin seeds
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- Salt and pepper

Wash and prepare the spinach in a large bowl.
