🛒 Ingredients

8 servings

8
  • 2 cups long-grain rice
  • 6 garlic cloves, minced
  • 1 large onion, diced
  • 2 tomatoes, diced
  • 1/2 yellow bell pepper, diced
  • Fresh parsley and chives to taste
  • Salt to taste
  • 2 tablespoons neutral oil
  • 1 can tomato sauce (optional)
  • Leftover grilled beef
  • Leftover grilled chicken
  • Leftover grilled sausage

Directions

  1. 1

In a large pot, heat the oil over medium heat. Sauté the garlic, onion, and yellow bell pepper until soft and lightly golden.

  2. 2

Add the chopped leftover meats and let them cook for a few more minutes to release their smoky aromas.

  3. 3

Stir in the diced tomatoes, then add the rice. Cover with hot water and pour in the tomato sauce if using.

  4. 4

Cook over medium heat, tasting and adjusting salt as needed throughout the cooking process.

  5. 5

When the rice is nearly done and the water is absorbed, sprinkle with fresh parsley and chives. Serve immediately.

💡 Chef's Tip

The smokier and more flavorful your BBQ leftovers, the better this dish will taste. Mixing different meats — beef, chicken, and sausage — gives the richest result.
