Directions
- 1
Heat the oil in a large skillet or Dutch oven over medium heat. Sauté the grated onion and garlic for 2 minutes until softened and fragrant.
- 2
Add the ground beef and cook, breaking it apart with a wooden spoon, for 5 to 7 minutes until well browned. Season with salt and pepper.
- 3
Stir in the rice and toast it for 1 to 2 minutes, coating each grain with the beef juices for extra depth of flavor.
- 4
Add the drained corn and chopped parsley, then pour in the warm chicken broth. Stir to combine and bring to a boil.
- 5
Reduce heat to low, cover tightly, and simmer for 15 to 18 minutes until the rice has absorbed all the liquid.
- 6
Remove from heat and let rest, covered, for 2 minutes. Transfer to a serving dish and sprinkle generously with shredded cheese.
- 7
Serve immediately while hot.
💡 Chef's Tip
For extra depth, add a splash of Worcestershire sauce when browning the beef. Leftovers reheat beautifully with a small splash of water to loosen the rice.
