Directions
- 1
Heat oil in a large heavy-bottomed pot over high heat. Add pork ribs and bacon and sear, adding small amounts of water gradually to prevent sticking, until the ribs start to turn golden.
- 2
Remove the meat with a slotted spoon and set aside. Discard excess fat, then sauté the onion, garlic, and green bell pepper in the same pot over medium heat for about 5 minutes until softened.
- 3
Add the washed rice and stir for 2 minutes to coat it with the aromatics. Pour in 5 cups of water and bring to a boil.
- 4
Once boiling, add the diced tomatoes, crumbled bouillon cube, and reserved pork ribs. Stir well, reduce heat to low, cover partially, and cook until all the water is absorbed, about 18 to 20 minutes.
- 5
Remove from heat and scatter fresh parsley and chives on top. Cover for 2 minutes to let the herbs bloom, then serve hot directly from the pot.
💡 Chef's Tip
For extra-tender ribs, marinate them for 30 minutes before cooking with crushed garlic, salt, pepper, and a squeeze of lemon. The rice will soak up all the meat juices for an even richer result.
