Garlic and Lemon Roast Beef
A juicy, flavourful roast beef marinated with fresh lemon juice and garlic, then slow-roasted in the oven with a touch of butter. Basting the meat every 10 minutes keeps it incredibly tender and moist. A hearty, crowd-pleasing Sunday roast that is surprisingly simple to make.

Preheat the oven to 200 °C (400 °F).
- 2
In a small bowl, combine the lemon juice, crushed garlic, salt, and pepper to make the marinade.
- 3
Rub the marinade all over the roast, massaging it firmly into every surface.
- 4
Spread the butter generously over the entire surface of the meat.
- 5
Place the roast in a roasting pan and bake at 200 °C for 10 minutes to seal in the juices.
- 6
Pour one cup of water into the bottom of the pan without pouring it directly over the meat.
- 7
Reduce the oven to 180 °C (350 °F) and roast for 1 hour, spooning the pan juices over the meat every 10 minutes.
- 8
Remove from the oven, rest for 5 minutes, then slice and arrange on a serving dish.
- 9
Drizzle with the pan juices and serve with steamed white rice.
💡 Chef's Tip
For deeper flavour, marinate the roast in the refrigerator for 1–2 hours before cooking. Use a meat thermometer — 60 °C (140 °F) at the centre gives a perfect medium roast.
