Directions
- 1
The night before, pierce the beef all over with a fork. Place in a deep dish with the onions, garlic, vinegar, and herbs. Cover and refrigerate for at least 12 hours.
- 2
The next day, drain the beef and reserve the marinade. Pat the meat dry with paper towels.
- 3
Heat the oil in a pressure cooker over medium heat. Sear the beef on all sides, turning regularly for even browning. Add a splash of hot water if the oil starts to smoke.
- 4
Pour the reserved marinade into the pot and stir for 1 minute to deglaze. Add enough hot water to cover the meat, then seal the pressure cooker.
- 5
Cook on low heat for 30–35 minutes until the meat is tender when pierced with a skewer.
- 6
Open the cooker, check the liquid level, and add the whole peeled potatoes. Cook uncovered on high heat for about 20 minutes until the potatoes are tender and the sauce has reduced to a rich, dark, slightly thickened gravy.
- 7
Slice the beef and serve with the potatoes, generously spooned with the pan sauce.
💡 Chef's Tip
Never skip the overnight marinade — the vinegar tenderises the meat deeply while the garlic infuses every fibre. Leftovers reheat perfectly in the sauce the following day.
