🛒 Ingredients

6 servings

6
  • 2 kg pork leg (fresh ham or shoulder)
  • 6 garlic cloves, sliced
  • Juice of 2 lemons
  • 1 tablespoon Dijon mustard
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 2 tablespoons olive oil
  • ½ cup dry white wine
  • Salt and freshly ground black pepper

Directions

  1. 1

Make small incisions all over the pork and tuck garlic slices inside. Whisk together lemon juice, mustard, olive oil, thyme, rosemary, salt, and pepper. Coat the meat thoroughly and let it marinate at room temperature for 1½ hours.

  2. 2

Preheat oven to 180°C (350°F). Place the pork in a roasting pan, pour white wine around it, and cover tightly with foil (shiny side down). Roast for 45 minutes.

  3. 3

Remove the foil, baste with pan juices, and roast uncovered for a further 30 minutes until the surface turns deep golden.

  4. 4

Flip the roast and continue cooking for 20 more minutes until well browned on both sides. Rest for 10 minutes before carving.

💡 Chef's Tip

Score the skin in a crosshatch pattern before marinating to help the flavors penetrate deeper and achieve an extra-crispy crust.
