Directions

  1. 1

Cook the potatoes whole in salted water for 15 minutes until tender. Drain and mash into a smooth puree.

  2. 2

Incorporate the egg yolk, flour, grated cheese, salt, and pepper into the mashed potatoes. Mix until a smooth dough forms.

  3. 3

Form the mixture into 2.5-inch croquettes and roll them in breadcrumbs until completely coated.

  4. 4

Heat oil to 338°F and fry the croquettes for 3-4 minutes until perfectly golden. Drain on paper towels.

  5. 5

Boil the eggs for 10 minutes, then cool and cut into quarters.

  6. 6

Prepare the vinaigrette: whisk together the olive oil, balsamic vinegar, mustard, salt, and pepper.

  7. 7

In a serving dish, arrange the greens, then add chopped red onion, sliced cucumber, avocado, and hard-boiled eggs.

  8. 8

Place the warm croquettes in the center and drizzle with the vinaigrette just before serving.

💡 Chef's Tip

For a lighter version, bake the croquettes in the oven at 392°F for 20 minutes. Serve warm so the croquettes stay crispy. You can prepare the ingredients in advance and assemble just before eating.
